For those of you who wanted the recipe for those famous Oatmeal Pancakes I have been munching on during the rides, here it is.

 

 

 

Oatmeal Pancake Recipe

 

This is from Laurel’s Kitchen, A handbook for vegetarian cookery and nutrition.

In the 1976 edition it is on page 120.

 

Ingredients:

 

1 1/8 cups milk

1 cup rolled oats

2 tablespoons oil

2 eggs, beaten

½ cup whole wheat flower

1 tablespoon brown sugar (I use 2)

1 teaspoon baking powder

¼ teaspoon salt

 

Combine the milk and rolled oats in a bowl and let them stand at least 5 minutes.

 

Add the oil and beaten eggs, mixing well.  Then stir in the flour, sugar, salt and baking powder.  Stir just until the dry ingredients are moistened.

 

Bake on a hot, lightly oiled griddle, using ¼ cup of batter for each pancake.  Turn them when the top is bubbly and the edges are slightly dry.

 

Makes 10 to 12 four inch pancakes.

 

 

I must use more than the designated ¼ cup as I don’t get but 6-7 pancakes from the recipe; they must be 5 incher’s I guess.
